How to make a traditional Taboon (Beduin outdoor oven)

by Nessia on May 6, 2010

The taboon is on the left.

For your next beach BBQ; you’ll need two or three cinder-blocks and a convex metal disk (hub-cap, old steel drum, disk-plow pieces, whatever you have lying around). Dig a hole, place cinder blocks on both sides, put disk over the top and make a small fire underneath. It helps to have a girl with this kind of back-end doing it for you.

Meanwhile, bring some Pita-bread dough, shape into small balls and pull them flat (yes, I know how this sounds…). Throw your dough onto the disk for just a few minutes, until it starts blackening on the edges and you’ve got a Middle-Eastern version of Tortillas! Pair with your favorite Longboard Syrah and try not to gorge yourself, I know how hard they are to resist…
